Cranberry Chocolate Chip Oatmeal Cookies

  • 1 cup butter, softened
  • ¾ Cup firmly packed brown sugar
  • ½ Cup granulated sugar
  • 2 Eggs
  • 1 Teaspoon vanilla
  • 1-1/2 Cup all-purpose flour
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon ground cinnamon
  • 3 Cup old fashioned oats
  • 1 Cup dried cranberries
  • 1 Cup chocolate chips
  1. Preheat oven to 350°F/180C.
  2. Beat butter and sugars together until creamy in a food processor or mixer. Add eggs and vanilla; beat well.
  3. Combined flour, baking soda, cinnamon and salt in a medium bowl. Add to sugar/butter mixture. Add oats, dried cranberries and chocolate chips to cookie mixture; mix well.
  4. Roll into golf-ball size dough balls and place on a baking sheet. Bake for 9 to 11 minutes or until light golden brown. Cool for about a minute on baking sheets, then transfer to a wire rack.
  5. Once completely cooled, store in an airtight container or zip-lock bag.
